Peanut butter & pretzel brownies from Kelly’s recipe! I can’t recommend it highly enough. The brownies are fudgy and chewy and not too sweet at all (which is always something I look for in a baked good). And the topping gives this great crunchy and salty balance to it. The only thing I’ll do different next time is press the topping into the batter a bit more, as the pretzels keep falling off. But my sister and I didn’t really mind that as we were shovelling them into our mouths last night!

I made some baked tomato risotto for dinner last night and it was excellent!  I mean, risotto is already delicious, but you add the spinach and the goat cheese, and you take away the stirring and it’s even better. And cutest thing ever: the can of cherry tomatoes had some tomatoes with stems still on! 

Funny story about a previous time I’d made this: for some reason I forgot that the lid would be INCREDIBLY HOT after I took it out the oven and I grabbed it with my bare hand. I felt pretty stupid, let me tell you. And then not ten minutes later, my sister did the same thing! We might be book smart, but we are not hot things smart.

Last night I was instructed to eat a fat-free supper. So…. no butter, no oil, no cream, no cheese, no eggs, no meat and no chocolate. THAT IS BASICALLY MY ENTIRE DIET (except the meat, obvs). Tonight I celebrated NOT having to do that by eating pasta that contained all those things (um, except the egg, meat and chocolate, of course). UGH SO GOOD. FAT MAKES FOOD TASTE SO GOOD.

I made vegan mac and cheese with canned pumpkin and almond milk and nooch and garlic powder and it is DELICIOUS (recipe here, if anyone’s interested). OBVIOUSLY it is not an exact match for real mac and cheese, but it has a lot of the cheesiness/richness/carbiness that I crave on cold rainy days like this. And hey, two vegetables in one meal! Maybe I won’t die of malnutrition this week.

FYI - tomatoes plus onions plus butter equals most delicious sauce ever. This is one of those recipes that I make over and over and over again and never get bored. Plus even when my cupboards are totally bare, I always have those three things plus pasta!
