I made some baked tomato risotto for dinner last night and it was excellent!  I mean, risotto is already delicious, but you add the spinach and the goat cheese, and you take away the stirring and it’s even better. And cutest thing ever: the can of cherry tomatoes had some tomatoes with stems still on! 

Funny story about a previous time I’d made this: for some reason I forgot that the lid would be INCREDIBLY HOT after I took it out the oven and I grabbed it with my bare hand. I felt pretty stupid, let me tell you. And then not ten minutes later, my sister did the same thing! We might be book smart, but we are not hot things smart.
